Making your own pasta isn`t difficult. If you know how. "PASTA" is the essential guide to homemade pasta, answering even those questions that often go unanswered – such as the right flour for different pasta types: When do you need durum wheat semolina, when fine flour, what is Farina Tipo 00…? How is the grain grown from which these milled products are made, and how does a mill work? What technique can you use to roll out pasta dough to a thickness of 0.5 mm without a pasta machine? In precise instructions with text and images, Slow Food chef Anna Pearson and photographer Catherine Pearson first demonstrate how to prepare 30 different pasta shapes, many of them without any special equipment like a pasta machine. In 40 seasonal recipes, the learned shapes are then transformed into classic Italian dishes and new pasta creations. Finally, a journey to Tuscany leads to the origin of pasta: at the organic farm "Podere Il Casale," the two authors learned all about one of the most important basic ingredients, durum wheat, and summarized their experiences and insights in a short report for their book – because conveying how grain is cultivated and processed is just as important to them as showing how to shape orecchiette and garganelli.
